Living in the Antelope Valley of Southern California means that spring really feels more like summer. The high got up to 87 degrees yesterday! With a light breeze, the weather has been gorgeous! So with Smoothie Season underway, I got the bright idea to make my own pina colada the other day, partially to battle the heat, and partially as a celebratory drink (I got a new job! Details coming in another post). But of course, I decided to try to make my cocktail a little less guilty so I kept out the rum (this time!) and added some greens.
The result? Dangerously good!
So here it is. A reminder that I am not the most precise cook, so these are approximate proportions…
1 handful of frozen spinach
1/4-1/3 ripe mango
1/3 ripe pineapple, cubed
1/3-1/2 can of coconut milk
splash of oj
few cubes of ice
Cover with water and blend!
Feel free to top this bad boy off with a cute little umbrella and pineapple slice. If I hadn’t been so excited to drink it, I most certainly would have fancied it up a bit.
Of course you could always amp this up by adding in a couple shots of rum for that extra punch.
